Yield: 6 servings Ingredients 1½ cups lentil trio blend, picked over, rinsed well (see note) 4 medium carrots, peeled and thickly sliced 4 medium russet potatoes, peeled and cubed 2 large sweet potatoes, peeled and cubed 1 can (26 to 28 ounces) diced fire-roasted tomatoes, with juice (see note) 6 cups water 1 medium clove garlic, minced 1 large vegan
